    This Creamy Broccoli Soup is loaded with shredded chicken and veggies. Easy to make, so filling, healthy, and the perfect chicken soup recipe for those cozy winter nights. A comforting bowl that the whole family will enjoy. . . Ingredients 1 Large Sweet Onion diced 2 Large Carrots peeled and finely diced 2 Celery Stalks finely sliced 1 Bell Pepper chopped 2-3 Garlic Cloves pressed 1 Tbsp Italian Seasoning Mix 1 Lb Boneless skinless chicken breast 6 Cups Low sodium chicken broth 1 medium Head Broccoli broken into small florets 2 Cups Milk 2 Tbsp Gluten-Free Flour Sea salt and pepper to taste 2-3 Tbsp Fresh chopped parsley, to garnish Instructions Heat oil in a large pot over medium-high heat. Add onion, carrots, celery, bell pepper, garlic and sauté until it starts to soften about 5 minutes. Add the chicken together with broth and bring to a boil. Reduce the heat, and simmer until chicken is cooked through. About 20-25 minutes Meanwhile, in a small bowl whisk milk and gluten-free flour until well combined. Once the chicken is done, remove and shred, then return to the pot. Stir in broccoli, milk mixture, salt, and pepper, and simmer for about 5-6 minutes more, or until broccoli is fork-tender and soup has thickened.     Cowboy 🤠 Mac n Cheese (5g net carbs) ⠀ My buddy just released this awesome almond flour pasta, The texture totally reminds me of wheat pasta! It’s filled with protein, fiber and low in carbs, so it’s a win win. The first thing I had to whip up was a big batch of Mac N Cheese. 🤤 ⠀ Here’s the recipe: ⤵️ (makes 2-3 servings) ⠀ INGREDIENTS * 1/2 bag of pasta * 2 tablespoons unsalted butter * 1/2 cup heavy whipping cream * Shredded Cheddar & Pepper Jack Cheese (you can use as little or as much as you’d like. I used about 1/2 cup of each) * 2 smoked sausage links, sliced * Black Pepper to taste ⠀ INSTRUCTIONS: ⠀ * Cook the pasta according to directions. ⠀ * While pasta is cooking, cook smoked sausage; set aside. ⠀ * Grate cheeses and toss together to mix; set aside * Melt butter in a large saucepan over MED heat, than add in heavy whipping cream and whisk to combine.  Cook for about 1 minute, whisking often. * Continue to heat over MED heat, whisking very often, until it begins to thickened and simmer. ⠀ * Stir in black pepper and cheeses, stirring to melt and combine. Stir mixture until completely melted and smooth. It should almost be the consistency of a semi thinned out condensed soup. ⠀ * In the same saucepan over LOW/MED heat combine drained pasta with cheese sauce, and sausage stirring to combine fully.     CHICKEN, CUCUMBER, TOMATO & AVOCADO SALAD 🥑 . 12-14 oz. boneless skinless chicken tenders (or chicken breast sliced ½ inch thick) 1-1 ½ tablespoon olive oil to grease the pan For Marinade/Dressing: 2 ½ tablespoons olive oil 1 ½ tablespoons water 4 tablespoons fresh lemon juice (2 small lemons) 1 tablespoon balsamic vinegar ½ teaspoon garlic powder 2 teaspoons dried parsley 2 teaspoons dried basil 1 teaspoon sea salt 1/8-1/4 teaspoon black pepper For salad: 1 large avocado-diced 1 cucumber -diced about 1 ½-2 cups cherry tomatoes-halved 1 small-medium red onion- sliced 2 tablespoons crumbled feta cheese- to sprinkle on top if desired First, in a medium bowl combine all ingredients for marinade/dressing and stir well. Reserve half of the mixture for later use as salad dressing (cover and store in the fridge). Now, place chicken tenders in remaining mixture and flip the chicken to coat well, then, cover the bowl and place in the fridge to marinate for at least 15-20 minutes. Grease grilling pan with olive oil, heat over medium high heat and grill the chicken a few minutes on each side until golden brown and cooked completely. Cool for a few minutes, then chop the chicken in bite size pieces. In a large bowl combine diced avocado, cucumber, sliced cherry tomatoes, red onion and chopped chicken, pour reserved dressing over the salad ingredients, stir well and serve. 📷 @fithealthyrecipes . Place another sheet of parchment paper on top of dough and use a rolling pin to roll into a thin round. The thinner the better. 6-Transfer to baking sheet and bake for 20 minutes. .
